He began his apprenticeship in the Loire and Cher alongside the Chef Mr Rouche, at the Grand Dauphin in Dhuizon (3 star michelin restaurant), at the doors of the Chambord park. He then travels the world, twelve years in the United States (California, Beverly Hills, Florida, Palm Beach), where he officiates as a private chef for several personalities. Then ten years in the Kingdom of Saudi Arabia for a member of the Royal family. All the Austellus vintages come from organic plots scrupulously selected. Harvested by hand, all clusters are sorted to select only the best.
