Night mechanical harvest with plot selection to retain acidity and freshness. Total destemming and cooling. Skin contact maceration before pressing with separation of different qualities of pressed juices. Stabulation on deposit from the must for 5 days.
Alcoholic fermentation between 11 and 13 ° C for 20 days.
Malolactic fermentation stopped.


Tasting notes

Very pale robe with pleasant green shades.
The nose evokes white flowers.
Nice freshness and a beautiful vivacity emerges with a touch of citrus delicately mixed like bergamot. Very refreshing and digestible, it will delight the taste buds.
