Kevin Dundon is an Irish celebrity chef, TV personality and author, he is a regular feature on Irish, British and American TV. Dundon is known in Ireland as the Good Food Ambassador for the largest food retailer Super Valu. Committed to his terroirs and the quality of his ingredients, Dundon has selected exceptional wines from our vineyard. All the vintages come from plots scrupulously selected for the quality of the terroir and the age of the vines. The result is superb quality wine reflecting the origins of the climate and soil from the south of France.

Soil

Rounded pebbles, limestone colluvium and subsoil. Grass-seeded vine rows on plain, with a dry, warm windy and sunny climate. The vineyards are not ploughed to encourage the growth of vegetation in the soil.

Winemaking

Nocturnal mechanical harvest with plot selection to retain acidity and freshness. Total destemming and cooling. Pressing with separation of different qualities of pressed juices. Alcoholic fermentation ends in oak barrels – Aging lasts 6 months.

Color

Sustained bright yellow color.

Nose

It has a delicate touch of apricot, honey and smooth white flowers aromas.

Palate

Flavors of peach and pear, it has a ripeness and finishes with a zesty citrus flavor and a lovely crispy and fruity balance.

3 years.

Food pairing

It can be served with white fish, seafood, light cheese. It will also pair nicely with the Signature Chef recipe of Kevin Dundon: The Poached Prawn with Bisque foam.
