The harvests are carried out by hand. In the cellars, the winemaker traditional winemaking of destemmed grapes in temperature controlled vats.
Fermentation process goes for 20 days for optimal balance. Vinification of each plot separately. Ageing 75% in vats and 25% in oak barrels.
Bottling comes after blending of different varieties. Three months vat ageing after blending to ensure a harmonious blend.
