The harvests are carried out by hand. Grapes are sorted first in the vineyard and then in the winery. In the cellars, the winemaker uses the traditional winemaking method of destemmed grapes in temperature controlled vat.
N°5 Côtes de Thongue – Organic white wine
Terroir Cotes de Thongue is an IGP title covering wines made in an area on the southern slopes of the Montagne Noire in the Languedoc-Roussillon, region of southern France. The wide valley of the river Thongue has been utilised viticulturally for hundreds of years
This denomination is characterized by the diversity and the creativity of the wines produced on this territory, the key words of this soil are:

The climate is Mediterranean with a mild winter, spring and autumn bringing more or less significant rainfall and a hot and dry summer. The tramontane, brings freshness and dries the vine, thus concentrating the aromas.
All the selected terroirs have a history and their own specific characteristics that are ideal for the crafting of fine wines. All are premium, high-quality wines, whose unusual aromas set them apart and which have been selected to offer consumers an alternative drinking experience.

100% Sauvignon blanc
The wines are grown on clay and limestone soil hillsides.
3 to 4 years.
Vivid yellow robe with brilliant golden reflections.
Harmonious nose, beautiful retro-olfaction on honeyed flowers, floral and white fruit (pear flesh).
The mouth is expressive, fruity and fresh dominated by exoticism. The flesh is round, tangy.
Best served between 10 and 14ºC.
For our cuvee Nº5, we chose a small medieval village of Languedoc, Puissalicon, equidistant from Béziers, Pézenas and Bédarieux of the Terroir of Côtes de Thongue. The winemaker makes Organic wines with the same passion for several generations in the family property. The vines are grown on soils of great diversity with a varied and original grape variety, it takes into account the peculiarities of the soil and the exposure of each parcel.
With a faultless sanitary state, he develops authentic wines in respect for the terroir, nature and the subtle balance that allows the expression of the secret harmony of the soil and the vine, they cultivate their vines according to the rules of the ‘Organic Agriculture’.
A wine of immediate pleasure as early as an aperitif or on mixed salads.
