Grass-seeded vine rows on plain – 26 years
Deep garnet colored robe
A smoky and earthy nose with savoury aromas of spicy meats and subtle berries
Best served between 13 and 15ºC
Nocturnal mechanical harvest with plot selection to retain acidity and freshness. Total destemming. Cold maceration before fermentation for 3 days with 3 pumping-over a day. Alcoholic fermentation for 30 days between 25°c and 27°c with two pumping-over a day. Soft pressing with separation of different qualities of pressed wines.
The palate carries quiet flavours of luscious black fruits and herbs such as fennel or tarragon.
Perfect with meat and cheese boards, smoked cheeses, pepperoni, pizzas, BBQ and grilled foods.
