This premium wine collection is the fruit of a teamwork between a creative chef and a winery. From passion and discoveries came an idea. That of proposing an organic wine collection that represent all the very best know how from the south of France. A wine designed by the world chef Manuel Maury

Manuel Maury, chef with a motley and uncommon career. He began his apprenticeship in the Loire and Cher alongside the Chef Mr Rouche, at the Grand Dauphin in Dhuizon (3 star michelin restaurant), at the doors of the Chambord park. He then travelled the world, twelve years in the United States (California, Beverly Hills, Florida, Palm Beach), where he officiated as a private chef for several personalities. He then spent ten years in the Kingdom of Saudi Arabia for a member of the Royal family.

Unique wines

All the Austellus vintages in white and red come from organic plots scrupulously selected for the quality of the terroir and the age of the vines. Harvested by hand, all clusters are sorted to select only the best. After the winemaking, the aging is done in barrels, precise work done by our winemakers in order to produce exceptional wines, providing a perfect expression of their terroirs.
