DOM DENISE
This wine honors the Cistercian monk of the eighteenth century, Dom Denise. Dom Denise wrote the earliest manuscript about viticulture and oenology. The manuscript was found only 10 years ago. The winemaking of this premium wine is all done with fully respect of the rules of Dom Denise. Harvested by hand, all clusters are sorted to select only the best. After the winemaking, the aging is done in barrels, precise work done by all our winemakers in order to produce exceptional wines, providing a perfect expression of their terroirs in the south of France.

Winemaking
Nocturnal harvest by hand with plot selection to retain acidity andfreshness. Total destemming. Cold maceration before fermentation for3 days. Alcoholic fermentation for 30 days between 25°c and 27°c withtwo pumping-over a day. Soft pressing with separation of differentqualities of pressed wines. After blending, the alcoholic fermentationends in brand new oak casks for 6 months
