Kevin Dundon is an Irish celebrity chef, TV personality and author, he is a regular feature on Irish, British and American television. Dundon is known in Ireland as the Good Food Ambassador for the largest food retailer Super Valu. Committed to his terroirs and the quality of his ingredients, Kevin Dundon has selected exceptional wines from our vineyard. All the vintages come from plots scrupulously selected for the quality of the terroir and the age of the vines. The result is superb quality wine reflecting the origins of the climate and soil from the south of France.

Soil | Rounded pebbles, limestone colluvium and subsoil, with a dry, warm, windy and sunny climate. The vineyards are not ploughed to encourage the growth of vegetation in the soil. |
Vineyard | The wines are planted on gently slope, well drained hillsides on northern part of the Corbières region near Narbonne. The vines are 40-55 years old with low yields 35/40 hl per hectare which offer both complexity and intense aromas. |
Winemaking | The Carignan undergoes a carbonic maceration while the Syrah and Grenache follow a more classic vinification with destemming. The vatting lasts three weeks. After blending, the alcoholic fermentation ends in oak casks. Aging lasts 12 months. |

Nose | Charming with notes of dry fig, black olive and white pepper. Aromas of cherries with a hint of nutmeg. |
Palate | Beautiful soft spices and minerals savors, evolved elements of truffle and coffee with red fruits dominating a long finish. |
